Lattice Apple Pie

Lattice Apple Pie

I love, love, love apple pie. I normally don't like anything that is too sour (with the only exception is the Chinese sweet n sour pork and apple pies). Other than these two, I can say I pretty much don't like anything sour. No lemon meringue pie, no sour skittles, no sour candy. It's a warm summer day and to celebrate our 3 year anniversary with my bf, instead of going out to have steak n lobster (which I love lobster), I all of a sudden really want to bake. The recipe was adapted from Annie's Eats. I trust her website so much, that every single item I followed her recipe turns out perfectly delicious. So with my lack of baking skills, I entrusted everything she says. And baked my very first apple pie. I'm actually pretty proud of making the crust without any fancy baking equipment. I made this pie with only bowls, spatulas, knives, and measuring spoons/cups. How'd it turn out? I loved it!!! I love how beautiful it looks!


Ingredients:

Pie Crust (One 9-inch. *Double the recipe for a double crust pie.) :
1¼ cups all-purpose flour
1 tbsp. sugar
¼ tsp. salt
8 tbsp. cold, unsalted butter, cut into small pieces
3 tbsp. very cold water

Filling:
4-5 medium/large Granny Smith apples (about 2½ lbs.), peeled, cored and sliced
1/3 cup granulated sugar
4 tbsp. brown sugar
1 tbsp. all-purpose flour
½ tsp. ground cinnamon
¼ tsp. grated nutmeg
1 tbsp. freshly squeezed lemon juice
2 tbsp. cold unsalted butter, cut into pieces
1 large egg beaten with 1 tablespoon cold water (for egg wash)







Procedure:
1. To make the pie crust, combine the flour, sugar and salt in a large bowl.  Mix briefly with a spatula to blend.  Add in the butter pieces and mix with spatula and use a knife to cut the butter into the flour until the mixture resembles coarse sand and the largest butter pieces are not much bigger than peas.  Mix in the cold water just until the dough comes together.

2. Shape the dough into a ball, wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.  (This dough can be frozen for up to 2 months.)  

3. Remove from the refrigerator. The dough should have a marbled effect, where the the concentrated butter pieces will help with the flakiness. On a lightly floured surface, roll out half of the pie dough into approximately a 12-inch round.  I lift up my dough sheet and rotate it every few rolls or so to prevent it from sticking to the work surface. (Keep the other half of the pie dough chilled for now.)  Transfer the dough to a 9-inch pie plate, trimming the excess and crimping the edges.  Cover with plastic wrap and freeze for 30 minutes.

4. Meanwhile, preheat the oven to 400˚ F.  Position an oven rack in the upper-middle position.  In a large mixing bowl, combine the sliced apples, sugars, flour, spices and lemon juice.  Toss well to combine.  When the bottom crust is finished chilling, pour the apple mixture and accumulated juices into the bottom pie crust and use a spatula to even the top out slightly.  Dot the surface of the apples with the pieces of cold butter.  Roll out the remaining pie dough on a floured work surface.  Make a lattice top crust as shown in the link. Brush the top and edges of the crust with the egg wash. This is important!  You want a lovely golden pie crust, trust me.

5. Place a baking sheet on the lower oven rack.  Place the pie on the upper rack and bake until the crust is golden brown and the juices are bubbling, about 50-60 minutes.  Transfer to a wire rack and allow to cool for at least 30 minutes before slicing.  Serve warm or at room temperature with your favourite vanilla ice cream.

Thoughts:
1. I prefer my apples to be a bit softer, the granny smith are still very crunchy. I should look for other cooking apples.
2. Maybe the granny smith apples are more sour, I find this recipe a bit on the sour side. But perfect with ice cream.
3. The amount of dough made was perfect. Too much apples this time. Next time 4 medium ones are good.

BBQ Pork Pastry 叉燒酥



Makes 12

Ingredients:
BBQ pork:
1 fist size pork tenderloin cut into short strips and marinate with Lee Kum Kee BBQ pork sauce and some soy sauce overnight

Sauce:
a teaspoon of BBQ pork sauce + 2-3 tablespoon water + little bit of soy sauce

Pastry:
Pillsbury Cresent Dough

Procedure:
1. Preheat oven to 375F. Grill or pan-fry the marinated pork slices. Once cooked try a piece for a taste test. Adjust with more or less BBQ sauce and salt to personal liking.
2. Roll out the Pillsbury Cresent Dough. Use fingers to merge the dotted triangles. Then cut the pastry into 12 rectangles.
3. Hold one of the rectangle pastry and spread a spoon to two spoons of sauce, making sure it goes to the edges to make the pastry more moist. Add a spoonful of pork slices. Close the edges.
4. Evenly spread the prepared pastry on a greased cookie sheet.
5. To each pastry brush with some beaten egg mixture on top to make the pastry shiny during baking.
6. Add decorative sesame seeds on top.
7. Bake at 375F for 15-20 minutes until golden brown.
8. Let stand and serve.

Cantonese Egg Tart 港式蛋撻


Prep: 12 tarts

Ingredients:
Egg Filling:
Water 200mL
Brown Sugar Pieces ~half a piece or ~75g
Egg 3 eggs
Evaporated Milk 80mL
Vanilla Extract 3 drops

Tart Shells:
12 tart shells from Tenderflake

Procedure:
1. Boil water and melt the rock sugar completely. Let stand to cool.
2. Beat the eggs thoroughly and add evaporated milk and vanilla extract.
3. When the sugary water is cool add it to the egg mixture.
4. Sift to remove clumps. And use the liquid for the egg filling.
5. Thaw the frozen tart shells 10-15 minutes. Preheat oven to 190oC (375F).
6. Spread the tart shells evenly on a cookie sheet. And add the egg filling to the tart shells to about 70% full.
7. Bake at 190oC (375F) for 15-20minutes or until cooked (check with a wooden toothpick).
8. Cool and serve.

Notes:
1. Place the cookie sheet closer to the bottom of the oven such that the egg filling can be cooked without being burn
2. To prevent cracking of the egg mixture, when the egg filling starts to rise up, open the oven door slightly and continue baking until the mixture is cooked thoroughly.

OMG OMG I finally went to the Duchess Bake Shop!!! I can't believe it. I first heard about this place around Dec 2010, and since then it has been half a year looking at pictures from urbanspoon or blogs or their website over and over again. And couple of times even drove by but couldn't quite find it because the winter was soo cold I just want to drive by to check out the place.

When we first entered the place, I'm in love with the decorations. I literally search for some more bakeries in Edmonton, but none have the same classy girly touch to it. It is beautiful! I love love the chandelier and the large white mirror. Even the chairs are cute as a button!

Then I'm overwhelmed by the number of selections they offer. Trust me, I've read about this place so many times, but being there to look at the selections I'm still sooo lost! Finally I decided to go for the mini Duchess cake ($6) which is the same name as their bakery. We also got pistachio and honey&tea macarons ($1.50 each). Everything served with the Duchess blend tea (black tea, $2.25). The treats weren't overly sweet and it tasted really good. Next time I want to try the Duke cake a richer chocolate version, thinking about it makes me excited :)

This will place definitely make a lovely tea time with your girlfriends.

Famoso, first heard about it a couple years ago when one opened in Riverbend. Except I never went to try it. Until a few friends always pick this restaurant for gatherings, then I start noticing what this place is about. There is an interesting story of how normal travellers meet authentic Italian pizza making and decide to bring into Canada. Now the place has over two handful of restaurants across Alberta and British Columbia. This must suggest how popular it has become.

The gimmick about this place is that their ingredients fly straight from Italy, pizza dough is hand-tossed, and pizza is cooked in a fire oven at 900F and cooks in 90secs. Pretty Amazing! The following three pizzas are shared between four girls and we still couldn't finish it! My favourite of the three is smoked salmon.

SMOKED SALMON $14.5
Extra virgin olive oil, garlic, oregano, and slivered onion. Baked, topped with smoked Atlantic salmon, capers, housemade dill cream sauce, lemon wedge.

SAN ANDREAS $14.5
Extra virgin olive oil, garlic, and oregano base, fresh mozzarella and chili-lime marinated roasted chicken. Baked, topped with avocado, diced tomatoes, slivered red onion, cliantro, drizzled with light cream, lime wedge.

SPICY THAI $14.5
Spicy peanut sauce, fire-roasted chicken, fresh mozzarella, and smoked mozza. Baked, topped with matchstick carrots, bean sprouts, cilantro and crushed peanuts.

GELATO 3 scoops $5.5

Location: 9/10 Their location across Edmonton are very convenient and with nice spacious parking lots which is an absolute bonus!

Food: 8/10 I quite enjoy their pizzas and I love their roasted tomatoe bisque soup too! great for dipping your pizzas. But sometimes I find the pizza gets cold really fast, and when it gets cold I find the dough really difficult to chew. So despite how amazing the flavours are I get turn off by the texture.

Price: 8.5/10 Their price range is on the good range. Great for sharing and not too expensive. And I've tried to order their soup and pizza combo during dinner hours even though it is for lunch, which is a great deal and you get the best of both worlds.

Service: 8/10 Generally really good service every time I go (about 5 times now). But this time I went, not so good, maybe because we have a table of 8 or so and the waitress was really annoyed with us and won't offer to help us take pictures or they charge us the gelato as in three individual scoops ($3.5 each) instead of three scoops ($5) which we asked for.

Decor: 9/10 The restaurant vibe is very modern and casual. Great for meeting friends and you can sit for hours to chat without getting into trouble by the waitress (usually, except this time). Lighting is just perfect to have the warm but modern feel.

Girls Night

This week I met up with two good friends of mine since junior high friend Natasha and Zoey. We used to have a nick group name for ourselves known as A.Z.N. lol cheesy but I still reminiscent about how silly when we are young. We did a buncha girly things like squeezing together in the bathroom to do make-up on each other and hanging out in Ikea eating cheap Swedish meatballs and giggling while sitting and posing in each of the showrooms. As we leave Ikea, we notice what a wonderful sunset ahead of us and we decide to stop by a nearby ravine and take some pictures. Despite the huge mosquitos feast on us, the photoshoot turns out quite nice.
